Good Evening all, tonight I am sharing a new Gluten Free recipe with you! I simply love chic peas and they are wonderful to work with in different food preparations tonight I have for you hummus!
Ingredients:
* 3 cans of garbanzo beans( rinse them before hand)
* 3 red bell peppers and 3 yellow bell peppers
* Olive oil
* salt and pepper
* 8-10 cloves of fresh garlic
* 1 fresh lemon
Tools of the trade:
Large pot
Food processor
mini chopper
Hummus
First thing you want to do is roast the peppers. Turn the broil on your oven and line a baking sheet with foil, place all 6 peppers on the sheet and roast for about 25-30 mins, turn them as necessary to make sure they get evenly blackened all around. once that has happened take the peppers out of the oven and place them all in a bowl and cover it with plastic wrap, doing this will make it much easier to peel the skin off the peppers.
In a medium pot you add 1/4 cup olive oil and 8 garlic cloves, let these cook for a about a couple minutes on medium heat; while this is going on juice the whole lemon and set aside. Throw in the chic peas, lemon juice and 1/2 tsp salt. Cook for 20-30 minutes until beans are soft and flavors have married. Taste and add salt if necessary.
After the beans are done cooking pour the whole thing in the food processor, add one whole red pepper, 2 raw cloves of garlic, and about 1/4 cup of the juice from the peppers. Pulse until everything is mixed and smooth. Taste and add salt and lemon juice as desired.
Topping
In a mini chopper chop up some of the red pepper with a little olive oil, salt, and raw garlic.
Take some yellow pepper and chop up by hand and mix with olive oil, salt, and raw garlic.
simply place topping in the middle of the hummus and drizzle with olive oil and enjoy!
