Good Evening! Tonight I have for you a delicious roasted chicken with an herb compound butter.

Ingredients for this recipe
1 whole organic chicken (using organic chicken keeps it GF because the chicken is not fed a wheat diet)
1 stick of butter
8 fresh Sage leaves (mine are from my garden)
1 teaspoon garlic powder
1 teaspoon crushed Rosemary
salt and pepper
Olive oil
Compound Butter
Take one stick of butter out and let it sit out until it reaches room temperature (you want the butter to be soft for mixing). take your sage leaves roll them up and cut them up thinly. Take your softened butter put it in a bowl and mix in the sage, rosemary garlic powder salt and pepper. Take a fork and mash the butter up with the herbs to make sure it become homogeneous. once that is done cover the bowl with plastic wrap and put in the frig.
Chicken
preheat oven to 350
Take your chicken out and remove all the extra goodies it came with then put the chicken in the roasting pan, take your compound butter and cut it into chunks, then very gently put the butter under the both breast skins, thigh skin. take some olive oil and baste the outside of the chicken with it. Cook your chicken in the oven for an hour to hour and 15 minutes. at the 25 minute mark take the chicken out and slice the skin on the thighs doing this will make sure it cooks thoroughly. Place chicken back in the oven. once the chicken is done take your thermometer and make sure the chicken comes our reading 160 degrees.
I added carrots to roast with it and we made a lovely mushroom and sage quinoa, you can pair this chicken with anything and its great to use for homemade chicken soup! Enjoy!
