Tonight I have a yummy quinoa recipe, it has become of my fav side dishes with any dinner and as lunch the next day!
1 large pack of white mushrooms ( rinsed, ends off and cut into thin slices )
7 fresh sage leaves ( finely chopped )
Olive oil ( about 2-3 Tablespoons to coat a non stick pan )
1 cup of quinoa (GF)
Salt ( 4 good grinds of salt, I use pink sea salt )
2 cups of vegetable stock (GF, I use Kitchen Basics)
Over medium high heat saute the mushrooms, sage and salt in olive oil until juices are running and mushrooms are browned. you should be able to start smelling the fragrance of the sage. once that is done add the quiona and vegetable stock ( we are using the stock in place of the water ) and cook until tender but not mushy.
