Basil, lemon zest and goat cheese stuffed chicken breasts.

A few nights ago I made a baked stuffed chicken dish and it turned out very yummy!



1 pack of boneless skinless chicken breasts ( organic )

1 lemon ( zest of whole lemon )

salt and pepper

15 fresh basil leaves rolled up and finely chopped

1 8 oz log of fresh plain goat cheese

Olive Oil

Cooking Instructions

pre- heat oven to 350, take out chicken and let it sit out while you prepare the stuffing.

In a bowl mash up the goat cheese, basil and lemon zest also add a dash of salt, mix very well and set aside.

Take your chicken breasts and pat them dry ,cut a slit in the middle/side of the breast big enough to hold the stuffing mixture, once that is done take a spoon and stuff in the mixture until the middle of the chicken looks plump. place each one in a 2 quart glass baking dish. salt and pepper both sides generously, then drizzle some olive oil over the the chicken and rub it on both sides.  Place the chicken in the oven and cook for 20-30 minutes, check the chicken with your thermometer and make sure it is cooked through as well as the stuffing mixture.
