Hello everyone! I hope you are all enjoying your weekend. Tonight we had a very yummy dinner that I would like to share with you 🙂
Organic whole roasted chicken with garlic, rosemary, sage and lemon, Forbidden rice with Tarragon, Thyme and Sage, and whole roasted organic carrots.
This recipe is all GF
1 whole organic chicken
1 bag of organic carrots ( peel but keep whole )
Fresh Sage and Rosemary ( about 1 tablespoon of both cut up finely )
Lemon Juice ( 1 lemon half squeezed )
1 Whole garlic head smashed
Dried Thyme and Tarragon
Black rice ( cook the black rice according to the directions on the bag then add the thyme, sage and tarragon, I always eye my spices and I like a lot of herby flavor so it’s really up to you on how much herb flavor you would like. Black rice is wonderful because it is filled with antioxidants.
Take your smashed garlic, finely chopped herbs, lemon juice and salt and pepper and mix it very well.
preheat oven to 350
Take your chicken out and remove all the extra goodies it came with then put the chicken in the roasting pan, take your herb paste, then very gently put the herb paste under the both breast skins, thigh skin. take some olive oil and baste the outside of the chicken with it, also salt and pepper the outside a little as well. Cook your chicken in the oven for an hour to hour and 15 minutes. at the 25 minute mark take the chicken out and slice the skin on the thighs doing this will make sure it cooks thoroughly. Place chicken back in the oven. once the chicken is done take your thermometer and make sure the chicken comes our reading 160 degrees.
Throw carrots in with the chicken while it roasts.
Cook according to package and then add your dried Thyme and Tarragon according to your own taste and always salt and pepper.
