Good evening everyone! tonight I have for you a yummy chicken thigh recipe 🙂 This recipe is very quick and simple for a weeknight dinner, the left overs taste great the next day as is or in a salad!
1 pack of Organic boneless skinless chicken thighs
1 tablespoon Smoked paprika
1 tablespoon Onion powder
1 tablespoon Garlic powder
5 grinds of each salt/pepper
Extra virgin olive oil
2 percent Greek yogurt
1 fresh lemon
2 tablespoons Dill
Preparation for the Chicken
Pre-heat your oven to 375. Take a large glass baking dish and place all the thighs in the dish, make sure they are spaced out well and not touching each other. take your salt and pepper, Sumac, Smoked paprika, Onion powder, garlic power and season both sides of the chicken. Take your olive oil and lightly pour some over all the thighs. Cover your dish with foil and bake it in the oven for 35 mins, after 15 mins take off the foil.
Take one 6 ounce container of yogurt and pour it in a bowl, then take about 2 tablespoons of Dill and mix it all together ( you can taste it as you go to see if you want more of less Dill ) then take one whole fresh lemon juice it and mix that in with the Dill and yogurt, once you have the amount of Dill flavor you prefer put the mixture in the frig to keep cold until the chicken is ready.
The yogurt sauce goes well on the side as a dip, I also made rosemary cannellini beans green beans for the side dishes! Enjoy!
