Potato salad

Hello everyone, I have a very simple and healthy potato salad recipe that does not use mayonnaise!


1.5 1b small red potatoes, sliced

1/4 cup chopped scallions

1/4 cup olive oil

1 TBSP of salt and pepper

1 TBSP Dijon mustard


Place sliced potatoes in steamer and cook until tender ( fork should go through easily ) Drain, and then place in a bowl. In a separate bowl, whisk the olive oil, salt, pepper, scallions and Dijon. Pour mixture over the potatoes toss to combine.

This potato salad tastes great the next day, make sure to stir it once you take it out of the refrigerator. Enjoy!
