Hello everyone! I have one of my favorite side dishes to share with you today! it’s simple to make and healthy to!
Ingredients
2 cans of chic peas, rinsed
1/2 can of yellow curry paste
1 small onion, diced
1 TBSP fish sauce
1 tsp olive oil
1 13.5 oz can of full fat coconut milk
Preparation
In a sauce pan heat the oil, add the onions and curry paste and cook for about 1 minute. Add the chic peas, fish sauce, and coconut milk and stir to combine. Bring the mixture to a boil for about 2 mins, then reduce heat to a simmer for 15-20 minutes to allow the flavors to combine and chic peas to soften.
You can enjoy this as a side, main dish, or even on top of some GF flatbread.
