Good afternoon everyone! Today I have a yummy and healthy red lentil patty recipe with a kalamata olive spread.
Tools you will need for this recipe are:
Food processor
mini chopper
Ingredients for patties
1 cup of red lentils ( rinsed )
1 cup of gluten free oats
half of a large onion cut into chunks
12 grinds of sea salt
1 teaspoon olive oil
1 teaspoon lemon juice
1 teaspoon turmeric
1 teaspoon hot Hungarian paprika
1 teaspoon garlic powder
1 teaspoon ras el hanout
Ingredients for olive spread
6 kalamata olives sliced
1 clove of garlic
1 teaspoon of lemon juice
2 teaspoons of olive oil
Preparation for the patties
Pre-heat the oven to 400 degrees, begin to boil the lentils according to package directions once they are done drain and rinse under cold water and set aside. While the lentils are cooking take the spices and oats and pulse in the food processor until the oats are a fine dust. Pour your spice/oat mixture into a large mixing bowl. Take the lentils, olive oil, salt, pepper, and onion and pulse a few times, make sure not to over do this because you do not want the lentils to become mushy. Next mix the lentils in with the oat/spice mixture. line the baking sheet with parchment paper and spoon out the patties leaving a space in between each and cook for 20 minutes. After the patties are done, take them out and sear them on both sides in a tablespoon of olive oil until the top and bottom are browned.
Olive spread preparation
Put the olives, garlic, lemon juice, and olive oil in the mini chopper and pulse until well combined.
