Hi everyone! Today I am going to share with you a lovely and yummy quinoa recipe. This dish is simple to make and can be used as a side or main dish.
Ingredients
1 cup of quinoa
2 cups of chicken stock
1 pint of cherry tomatoes roasted
2 1/2 tablespoons of olive oil divided
6-7 kalamata olives finely diced
1/2 teaspoon of turmeric
Sea salt
Preparation
Roasted tomatoes
First wash your tomatoes thoroughly and then toss them in a bowl, take 2 tablespoons of olive oil and pour over the tomatoes and mix to combine. Roast the tomatoes uncovered at 400 degrees for 40 mins.
Quinoa
Take 2 cups of stock, 1 cup of quinoa, 1/2 tablespoon of olive oil, 1/2 teaspoon of turmeric and 12-15 grinds of sea salt then bring it up to a boil, once it comes to a boil cover and reduce the quinoa to a simmer, the quinoa should take 15-20 mins I always like to give it check at the 10 min mark.
Once the tomatoes and quinoa are finished, pour the quinoa into a bowl, add the tomatoes and the diced kalamata olives and stir to combine everything. enjoy!
