Brown rice veggie bowl

Good afternoon everyone! I have a yummy rice bowl recipe to share with you! once a week I do different rice bowls, I just love them because there are endless combinations you can do and they are healthy and filling!

Ingredients

1 pint of cherry tomatoes

1 cup of brown rice

1 1/2 cups of unsalted chicken stock

1 bunch of scallions

1 bunch of fresh asparagus

2 1/2 sweet onions chopped

Toasted sesame seeds for sprinkling

salt to taste

1 teaspoon garlic powder

1 teaspoon lemon juice

1 1/2 tablespoons of olive oil

Preparation

Pre heat oven to 400 degrees, take the tomatoes and asparagus and mix it together with salt, lemon juice, garlic powder,  and olive oil make sure all the veggies are coated and then place them on a lined baking sheet roast for 35 mins, checking on them half way through and turning the veggies around.

The brown rice takes 40 mins to cook, let the rice, stock  and salt come to  a boil then cover it with a lid and let simmer for 40 mins.

While the rice is cooking and the veggies are roasting start sauteing the onions in a tablespoon olive oil over medium heat and cook for 35 mins. Then cut up your scallions and set aside with the sesame seeds.

Once everything is done you can assemble the bowl, rice on bottom then veggies, onions and scallions and finally sprinkle with sesame seeds. I also like to add some chili paste to my bowl for spice!
