Chicken and rice soup

Here is a wonderful healthy and simple soup recipe that is great on a winter day.


1 cup brown rice rinsed
8 cups chicken stock
3-4 carrots, chopped
2 stalks celery, chopped
1 rotisserie chicken
1 TBSP chopped herbs

Cook brown rice in two cups of chicken stock according to package directions. Simmer carrots and celery in remaining stock until tender, 5-10 minutes. Add chicken and herbs and simmer until chicken is heated through. Put rice in bowls and pour soup over and enjoy!
