Red lentil soup

Good afternoon! Today I have a yummy lentil soup recipe to share with you! I love lentils and they make such a great soup, this is a easy and healthy weeknight staple!

Ingredients

1 cup red lentils ( rinsed and picked over for stones )

4 cups unsalted chicken stock ( I use kitchen basics )

1 medium onion chopped

2 teaspoons turmeric

1 teaspoon garlic powder

1 tablespoon olive oil

1 1/2 cups frozen chopped spinach

1 tsp pink sea salt

Instructions

Heat olive oil over medium heat and sauté the onion for 2-3 minutes, add in the spices and cook for 1-2 minutes, add in the 4 cups of stock, lentils, salt and spinach and let come to a boil about 5-6 minutes. Let soup simmer for 15 minutes or until lentils are tender ( not mushy ) salt to taste and enjoy!
