Last night I made a homey yummy bean bowl that I just fell in love with, so today I am going to share it with you 🙂
Ingredients
1 red bell pepper chopped
1 medium onion chopped
1 tablespoon turmeric
3 teaspoons red curry paste
1 tablespoon olive oil
1 teaspoon salt
2 cans of chic peas rinsed
1 can full fat coconut milk
1 can petite diced tomatoes
1 cup chopped frozen spinach
2 cooked chicken breasts from a roasted chicken chopped
Preparation
In a large sauce with olive oil over medium heat sauté the onion, turmeric and curry paste until fragrant about 3 minutes, add in the red pepper and diced tomatoes and cook for 5 minutes. Pour in the chic peas, spinach, salt and coconut milk and let it come to a boil. Once it comes to a boil let it simmer for 20 minutes so that all the flavors marry and the mixture becomes creamy. During the last 2 minutes of cooking stir in the cooked chicken, salt and pepper to taste and Enjoy!
