Today I have a simple and healthy veggie bowl for you!
Ingredients
1 bag green beans
2 cans chic peas ( rinsed )
1 cup quinoa ( rinsed and drained )
2 cups chicken stock
Turmeric
Garlic powder
Onion powder
Olive oil
Salt
Parsley
Mushroom better than bouillon
Green bean and Chic pea preparation
Pre-heat oven to 375 and line two baking sheets with foil and parchment paper
In a large bowl combine green beans, 1 tablespoon garlic powder, 1 tablespoon onion powder, 6 grinds of salt and 1 tablespoon olive oil. Stir to combine.
In another bowl combine the rinsed chic peas, 2 teaspoons turmeric, 1 teaspoon parsley, 1/2 tablespoon garlic powder, 1 tablespoon onion power, 5 grinds of sea salt and 1 tablespoon olive oil.
Roast both until each is a little golden brown, half way through stir both the green beans and chic peas, should take 15 minutes depending on your oven so check them a few times.
Quinoa preparation
Rinse and drain 1 cup quinoa this will take out the bitterness. In a pot combine 2 cups stock, 1 cup quinoa, 1 teaspoon turmeric, 2 teaspoons parsley, 1 tablespoon onion powder and 3 teaspoons mushroom better than bullion and 5 grinds of sea salt. Let come to a boil, stir cover and simmer for 15 minutes. Once the quinoa is done stir in 1 teaspoon lemon juice ( this brightens the flavors ) and 1 teaspoon olive oil, stir and serve.
Once everything is done you can arrange it in your bowl however you like!
